Ingredients (for 4 people) :
1 beautiful piece of white fish, it can be cod or sea bream.
Herbs of your choice: parsley, coriander, and/or chervil
1 tablespoon of sesame seeds
2 large yellow lemons
1 tablespoon of soy sauce, even 2
Slice your fish fillet in cubes about 1,5 cm x 1,5 cm, big enough so that the ceviche doesn’t end in a soup...
Then, rest it in a salad bowl. Slice the raw fennel and leek very finely, put everything in the bowl.
Add olive oil, lemon juice, soy sauce, pepper.
Shred a little the zest of lemon (very good!).
Roll up your sleeves, remove your jewels, wash your hands, and HOP, dig your hands into the salad bowl and mix it with grace.
Have a sip of a dry, chilled white wine, before testing a bite of the ceviche to make sure there is no lack of seasoning.
Ceviche give a lot of water, so once mixed, serve it in another dish, always prefer a Three Seven dish.
Add the herbs for the color, and sprinkle it all with pepper chili, it spades!
