Roasted cod with leeks and zucchini

This is an express recipe, very easy and fast to prepare, ideal for a last minute dinner.

Ingredients (for 4 people) :
1 filet of cod (take a large piece rather than 2 small ones), about 800 gr
2 leeks
2 zucchinis
4 lemons
Olive oil
Salt of Guerande
Espelette pepper
Blackpepper

Preheat your oven to 200 to 300 degrees on grill position.
Rest the cod fillet in a large dish.
I like to put it on a sheet of parchment paper (easier to clean the dish after cooking).
Generously sprinkle the fish with lemon juice, then olive oil, lots of black pepper, salt, and chilli pepper.
Cut the leeks in slices of 2 to 3 mm, and do the same with the zucchinis, but thiner!
Arrange the leek on top the fish, and the zucchinis on the sides.
Add 1 or 2 more lemon juice, a little olive oil, salt and pepper.
Cook the fish in the grill position for 10 minutes, then switch to regular heat position  for about 15 minutes.

When serving, add a dash of olive oil and soy sauce.

Enjoy!
